Legendary Wilson's Soul Food Honored

Today's ABH has a great article on Angelish Wilson and Wilson's Soul Food in downtown Athens. I've never had a better piece of fried chicken in my life than Mrs. Wilson's.

According to the article, the Southern Foodways Alliance, an institute of the Center for the Study of Southern Culture at the Ole Miss whose mission is to document and celebrate the diverse food cultures of the American South, will honor Wilson and her "meat and three" colleagues at "Camp Athens: An Edible Education in Oilcloth and White Linen" on Saturday.

Angelish Wilson serves a plate of food to John Smith at Wilson's Soul Food in downtown Athens. Wilson's father started the restaurant in 1981. (yeah, the ABH's web site got Mrs. Wilson and Mrs. Teresa mixed up in their captions)

"Anybody can cook," [Mrs. Wilson] said. "You see that show on TV where they can prepare a meal in 30 minutes? It's tasty, but it's not soul food. You've got to give it time, to let things simmer. That's where the love comes in. Cooking is just getting it done. Simmering is where the real taste comes from. Don't get in a hurry."

Congrats on this well deserved recognition. All photos are from the Athens Banner Herald's article.

You have no clue how much I miss Ms. Teresa and Mama Wilson. Thank you very much for linking this Paul. It is by FAR my favorite restaurant in Athens (pork chops were my primary choice, although every now and then, there was just so many good veggies, I'd get a 4vegetable plate. Oh, and the pies are a mandatory thing. Oooeee, that blackberry pie).

My cholesterol went up 10 points just looking at that picture.

That is a good thing.

Egger: how right you are about the fried pork chops. Angelish Wilson is to pork chops what Picasso was to painting. Sometimes, if you're lucky, she'd have brunswick stew in the back (but you'd have to ask for it). And when you fuss over how good the pie is, she'll bring you a scoop ice cream.

The fact of the matter is Wilson's kicks Weaver D's ass. Dexter Weaver will charge you more money from day to day depending on how much larger the pork chops or chicken breasts were compared to yesterday. What the hell is that all about?

Dawgnoxious,
Yes she does, but then, I wasn't trying to give all my ladies secrets away on the internet. Somethings are left for knowledgable customers only (hehe)

And absoultely positively agree on Weaver's. After learning of Wilson's sometime in the mid to late 90s, I honestly went back to Weaver's maybe once or twice at most and then only because a friend forced it. After eating Wilson's, both the quality and price are so vastly superior to WD's (all due respect given though, cause the man is "Automatic y'all") that I only wanted one soul food downtown.

Peaches isn't bad either, same with Down Home Cookin and Plantation if you're in a buffet mood.

True Weaver Ds story....so I'm in there and I want a piece of fried chicken. He gives it to me.

Guy behind me (white dude) asks for a fried pork chop. "We're all out."

Guy behind him (black dude) asks for a fried pork chop and gets one "This is my last one." LMAO.

Weaver is a freak.
